Five Questions with... Bruce Lim
 

brucelim_storyIf you could only take five ingredients with you to a deserted island, which five would they be?

Garlic, ginger, onions, lemongrass and chilli… why? Because these are the best spices to have with me! I can whip up any dish with them and I will never grow tired or bored with the tastes that these spices bring to any dish.

What would your last meal be?

I love eating and all kinds of food, especially the dishes I prepare on Tablescapes, that is currently airing on the Asian Food Channel. However, if I really had to choose my last meal, it would be the pan-seared foie gras, cassoulet and duck confit cooked by Daniel Boulud. Couple that with a bottle of Zinfendel from Peju Vineyard in Napa Valley and it would be the perfect meal!

 

If you had to have one dish for the rest of your life, what would it be?

I like this traditional pork-based dish called Sinigang. It’s a sour broth soup that I can eat everyday and still be extremely happy! As it is, I’m already eating it at least four times a week.

 

What's the one thing you never want to eat again?

I would consider myself quite the adventurous eater who would eat something more than once. In fact, my personal rule is that I will try anything at least three times. However, the one thing I honestly dread is the Mangrove worm, Tamilok in tagalog! It was truly an awful experience that I would never want to repeat again.

 

What's the one thing you've always wanted to eat, but haven't gotten round to trying yet?

I love mangoes with a passion. Unfortunately, I have not had the good fortune of tasting the sweetest mangoes in world. The best mangoes can be found on the coast of Zambales, a province of the Philippines. As it is a very small island, they usually don’t produce a large quantity of mangoes, but you can bet that I’ll definitely be there at their next harvest!
