Ingredients for Coriander Marinade *
20 g fresh coriander leaves
1/2 clove garlic
1/2 tsp minced ginger
1/2 tsp garam masala
1 large green chilli
2 Tbsp Greek yoghurt
Salt and pepper to taste
Method
1. Blend all the ingredients, except yoghurt, salt and pepper, to very fine puree.
2. Mix yoghurt in and season with salt and pepper to taste.
Ingredients for Creamy tomato sauce **
200 g tomatoes
40 g cashew nuts
1 bay leaf
1/2 clove garlic
1/2 tsp minced ginger
1/2 tsp honey
Salt and pepper to taste
Method
1. Bring everything to a boil except the honey, salt and pepper. Reduce the heat and cook until the tomatoes are very soft, about 10 -15 minutes.
2. Blend the mixture in a food processor to a very fine puree and strain through a fine sieve.
3. Season with salt and pepper to taste, then add honey. Set aside.
Ingredients for pizza topping
120 g chicken breast (* see above)
1 naan bread, 10-inch (store-bought)
1 Tbsp creamy tomato sauce
(** see above)
1/2 head iceberg lettuce, chopped
Salt and pepper to taste
1 pickled red onion, sliced (store-bought)
2 red grapes, sliced
3 raspberries
20 g feta cheese
Finishing
1. Marinate the chicken breast with coriander marinade for at least 30 minutes before cooking.
2. Grill the chicken breast about 1 minute on each side. Finish in a pre-heated oven for 6 minutes at 180°C, and then let chicken rest for 2 minutes.
3. Re-warm the naan in the oven for 1-2 minutes or until crisp. Spread the creamy tomato sauce on the naan.
4. Cut the chicken into cubes and mix with iceberg lettuce. Season with salt and pepper if required.
5. Arrange chicken and lettuce on the naan and garnish with pickled red onion, grapes, raspberries and feta cheese.
