| Beef Semur |
Serves 4
Needs 2 hours plus 20 minutes standing time
Ingredients
500 g onions
40 g ginger
1 kg beef shin, cut into pieces
11/2 Tbsp black soya sauce
1/2 cup oil or more, for frying
1 L meat stock or water
4 potatoes, peeled and halved
2 carrots, peeled and cut into chunks
3 Tbsp vinegar
Salt, to taste
Mixed spices
1/2 cinnamon stick
8 cloves
2 pcs star anise
1 Tbsp black peppercorn
Steps:
1) Combine the spices and blend to a fine powder in a spice blender. Measure 1 Tbsp of the blended spice mix and season to taste with salt.
2) Quarter half of the onions and blend the rest with ginger. Mix the blended ginger-onion paste with the beef, add black soya sauce and 1 Tbsp of the seasoned ground spices and marinate for 20 minutes.
4) Heat up oil in a pot. When oil is hot, add quartered onions and sauté till soft. Add marinated beef and cook for 10 minutes. Add stock. When meat is almost done, add potatoes, carrots
and vinegar.
5) When beef semur is ready (the gravy consistency should be thick), season to taste with salt. Serve with sambal belachan.
