| Jasmine Tea Smoked Salmon Salad |

Serves 4
Ingredients
1 Tbsp jasmine tea leaves
1 Tbsp brown sugar
2 Tbsp uncooked rice grains
4x120g salmon fillets
for the garnishing
a bunch of baby salad leaves
avruga roe, as desired
4 cherry tomato wedges
8 semi-dried tomatoes
olive oil
white balsamic reduction
Method
1. Place the tea leaves, sugar and rice grains on a piece of aluminum foil.
2. Carefully place the foil in a pot and heat over medium heat. Once items in foil heat up, it will start to smoke.
3. Place fillets in the pot and cover, turn off the heat and let it smoke for about 12 minutes.
4. Remove fillets from the pot and serve with garnishing
