| Doubled-Boiled Minced Pork Belly Consomme with Water Chestnuts |

Serves 10
Ingredients
500 g pork belly, minced
10 water chestnuts, chopped
10 dried scallops (conpoy)
1.5 L chicken consommé
1 tsp sugar
2 tsp salt
a dash of white pepper
a dash of Chinese Hua Tiao wine
a dash of dark soy sauce
Spring onions, chopped for garnishing
Method
1. Mix well all the ingredients and pour into a large bowl or individual soup bowls. Steam for 45 minutes or until pork is soft.
2. Garnish with spring onion and serve.
